After a selected harvest of 5000 Kgs. per hectare maximum in early October, the grapes are brought into the winery where they undergo alcoholic fermentation (30 days) with daily crushing and pumping over. Malolactic fermentation is carried out with no additional bacteria at a steady temperature of 20ºC for 22 days, during which time the malic and lactic acid levels are monitored. The wine is aged for 12 months in new and semi-new French oak barrels and is bottled.
